Ever tried the combo of fennel seeds and meat, any meat? The
magic is in fennel, not in the meat. Using fennel just completely changes the
flavor of meat, for that matter, use in veggies, and you will be surprised as
hell.
People across globe find it hard to create a good flavorful chicken
burger, hence came fried chicken burgers, but we have number of recipes for
other meats. Why so? ‘Cos chicken is so tender, it can’t be cooked for long? Thing
is, for chicken, chefs have to take a risk or two, otherwise, we have number of
chicken recipes, only from France, so just think about how many are there in
whole wide world.
For Chicken burger, we will make patties, but remember,
need to take care of chicken as ground chicken will be way too dry if not
cooked properly. Now some Chefs will say use bacon or pork fat for moisture in
chicken, but hey, what kind of chicken burger will it be if we mix other meat
in it. So, we will use an Indian magical ingredient, clarified butter (Ghee),
which is made from unsalted butter. Now the Ghee will have its own flavor so to
overcome it, we will use fennel seeds, and voila, we have Eureka.
CHICKEN BURGERS
5 tablespoons fennel seeds, crushed
1 cup finely chopped red onion
9 small garlic cloves, minced with pinch of salt
2 teaspoon table salt
4 teaspoons Kashmir Red Chili
Powder, for color and flavor
2 pound ground chicken
8 burger buns
Dill Pickle slices
Cheese slices,
optional
Mayo, optional
Salad, optional
METHOD:
- In a large mixing bowl, combine onion, garlic, fennel seeds, salt and chili powder.
- Add Chicken and mix the ingredients evenly.
- Add Clarified butter mixing gently until the seasonings are well incorporated, but taking care not to overwork the chicken. We don't want mushy chicken paste.
- Divide the seasoned chicken mix into eight portions and shape into patties. Place the patties on a plate and chill for at least 4 hours.
- Heat a grill pan to medium high and cook the patties. Remember the chicken cooks really fast. So it will take max 3-4 minutes a side.
- Remove Patties from the pan and allow them to rest briefly before serving.
- Place the burgers on toasted buns and top each one with a little of the fennel seeds and dill pickle slices.
- For different combinations, use cheese, mayo and salads of your choice, and enjoy
